African Peanut Soup

A rich and hearty African Peanut Soup featuring creamy peanut butter, vegetables, and warm spices, perfect for a comforting and flavorful meal.

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 large sweet potato, peeled and diced
  • 2 medium carrots, diced
  • 1 red bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup natural peanut butter (preferably unsweetened)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Chopped fresh cilantro for garnish
  • Chopped roasted peanuts for garnish (optional)

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and grated ginger; cook for another minute until fragrant.
  3. Stir in diced sweet potato, carrots, and red bell pepper. Cook for 5 minutes, stirring occasionally.
  4. Add diced tomatoes, vegetable broth, smoked paprika, and cayenne pepper. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 20 minutes.
  5. Remove from heat. Stir in peanut butter until fully incorporated and the soup is creamy.
  6. Use an immersion blender to puree the soup to your desired consistency, or transfer portions to a blender carefully and blend.
  7. Season with salt and black pepper to taste. Reheat gently if needed.
  8. Serve hot, garnished with chopped cilantro and roasted peanuts if desired.

Notes

For added protein, serve with grilled chicken or chickpeas. This soup pairs wonderfully with warm crusty bread or rice.
