Bang Bang Fried Rice

Bang Bang Fried Rice is a spicy, flavorful fried rice dish packed with crunchy veggies and a creamy, zesty sauce, perfect for a quick and satisfying meal.

  • 2 cups cooked jasmine rice, chilled
  • 1 cup cooked chicken breast, shredded
  • 1/2 cup carrots, diced
  • 1/2 cup bell peppers, diced
  • 1/4 cup green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 2 eggs, lightly beaten
  • 2 tablespoons mayonnaise
  • 1 tablespoon Sriracha sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon rice vinegar
  • Salt and pepper to taste
  • Optional: sesame seeds for garnish

Instructions

  1. In a small bowl, combine mayonnaise, Sriracha, soy sauce, and rice vinegar to make the Bang Bang sauce; set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add garlic and sauté until fragrant, about 30 seconds.
  4. Pour in eggs and scramble until just cooked; remove from skillet and set aside.
  5. Add carrots and bell peppers to the skillet and stir-fry for 3-4 minutes until tender-crisp.
  6. Add the cooked rice and shredded chicken to the skillet; stir well to combine and heat through.
  7. Pour the prepared Bang Bang sauce over the rice mixture and toss to evenly coat.
  8. Return the scrambled eggs to the skillet along with green onions; stir to blend all ingredients.
  9. Season with salt and pepper to taste, then remove from heat.
  10. Serve hot, garnished with sesame seeds if desired.

Notes

For extra crunch, top with chopped peanuts or serve with a side of steamed bok choy for a complete meal.
