BBQ Brisket Melts

These BBQ Brisket Melts combine tender smoked brisket with melted cheese and tangy barbecue sauce on toasted bread, making a perfect savory sandwich for any meal.

  • 2 cups cooked BBQ brisket, shredded
  • 4 slices of sourdough bread
  • 1 cup shredded sharp cheddar cheese
  • ½ cup barbecue sauce
  • 2 tablespoons butter, softened
  • ½ small red onion, thinly sliced (optional)
  • Pickles for serving (optional)

Instructions

  1. Preheat a skillet over medium heat.
  2. Spread butter on one side of each bread slice.
  3. Place two slices of bread, buttered side down, on the skillet.
  4. Layer shredded brisket evenly on each slice in the skillet.
  5. Drizzle barbecue sauce over the brisket.
  6. Sprinkle shredded cheddar cheese on top of the brisket and sauce.
  7. Add red onion slices if using.
  8. Top each with the remaining bread slices, buttered side up.
  9. Cook until the bread is golden brown and cheese is melted, about 3-4 minutes per side, pressing gently.
  10. Remove from heat, slice, and serve warm with pickles if desired.

Notes

For an extra kick, add some sliced jalapeños or serve with a side of coleslaw to complement the smoky BBQ flavor.
