Butter Chicken Skillet

This Butter Chicken Skillet is a rich and creamy Indian-inspired dish that combines tender chicken in a spiced tomato-butter sauce, perfect for an easy weeknight dinner.

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • 1 cup tomato puree
  • 1/2 cup heavy cream
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked basmati rice or naan bread, for serving

Instructions

  1. Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat.
  2. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add the remaining butter. Sauté onions until soft and translucent.
  4. Add garlic and ginger; cook for 1 minute until fragrant.
  5. Stir in garam masala, cumin, coriander, turmeric, and chili powder; cook spices for about 30 seconds.
  6. Add tomato puree; simmer for 5 minutes to thicken the sauce.
  7. Return chicken to the skillet and stir to coat with sauce.
  8. Pour in heavy cream and simmer on low heat for 10 minutes until the chicken is cooked through and the sauce is creamy.
  9. Season with salt to taste and garnish with fresh cilantro.
  10. Serve hot with basmati rice or naan bread.

Notes

For extra flavor, marinate the chicken in yogurt and spices for 1 hour before cooking.
