Cheesy Breakfast Rolls

  • 1 package refrigerated crescent roll dough
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked breakfast sausage, crumbled (optional)
  • 2 tablespoons milk
  • 1 tablespoon butter
  • Salt and pepper, to taste
  • 1 tablespoon chopped fresh chives (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk eggs with milk, salt, and pepper.
  3. In a skillet, melt butter over medium heat. Pour in egg mixture and cook, stirring gently, until soft scrambled eggs form but are still slightly runny. Remove from heat and set aside.
  4. Unroll crescent dough and separate into triangles.
  5. Place a spoonful of scrambled eggs on the wide end of each triangle, sprinkle with cheddar cheese, and add sausage if using.
  6. Sprinkle with chopped chives if desired.
  7. Roll up each triangle from the wide end to the point, sealing edges gently.
  8. Place rolls on prepared baking sheet and bake for 12–15 minutes until golden brown.
  9. Remove from oven, let cool slightly, and serve warm.

Notes

For a vegetarian option, skip the sausage and add sautéed vegetables like bell peppers or spinach for extra flavor and nutrition.
