  • 6 cups frozen shredded hash browns, thawed
  • 2 cups shredded sharp cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1/2 cup chopped onion
  • 2 cups crushed cornflakes
  • 2 tablespoons melted butter (for topping)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine hash browns, cheddar cheese, cream of chicken soup, sour cream, melted butter, chopped onion, salt, and pepper; mix until well blended.
  3. Transfer the mixture to the prepared baking dish and spread evenly.
  4. In a separate bowl, toss crushed cornflakes with 2 tablespoons melted butter until coated.
  5. Sprinkle the cornflake topping evenly over the potato mixture.
  6. Bake uncovered for 45 minutes or until the top is golden brown and the casserole is bubbly.
