This Cheesy Taco Tater Tot Bake is a flavorful and comforting casserole combining seasoned taco beef, crispy tater tots, and melted cheese for an easy, crowd-pleasing meal.

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 (32 oz) bag frozen tater tots
  • 1/2 cup diced onion
  • 1/2 cup diced green bell pepper
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup salsa
  • 2 tbsp olive oil
  • Optional toppings: sour cream, sliced jalapeños, chopped cilantro

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and green bell pepper; sauté until softened, about 3-4 minutes.
  3. Add ground beef to the skillet and cook until browned, breaking it apart as it cooks.
  4. Stir in taco seasoning and salsa, then add black beans; cook for another 2-3 minutes until well combined.
  5. In a greased 9×13-inch baking dish, spread the beef mixture evenly.
  6. Top the beef layer with an even layer of frozen tater tots.
  7. Sprinkle shredded cheddar and Monterey Jack cheese evenly over the tater tots.
  8. Bake for 30-35 minutes, or until the tater tots are golden and crispy and the cheese is melted and bubbly.
  9. Remove from oven and let cool for 5 minutes before serving. Add optional toppings as desired.

Notes

For an extra kick, add sliced jalapeños before baking or serve with a dollop of sour cream and fresh cilantro for added freshness.
