  • 1 cup cooked shredded chicken breast
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 1/2 cup diced onion
  • 1 cup egg noodles
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried thyme
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrot, and celery; sauté for 5 minutes until vegetables are tender.
  2. Add chicken broth, shredded chicken, bay leaf, salt, pepper, garlic powder, and thyme to the pot. Stir well.
  3. Bring the soup to a boil, then reduce heat and simmer for 10 minutes.
  4. Add egg noodles to the pot and cook until tender, about 7 minutes.
  5. Remove the bay leaf and adjust seasoning if necessary.
  6. Ladle soup into bowls and serve hot.

Notes
