  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 2 tablespoons vegetable oil
  • 1/2 cup chopped green onions
  • Salt and pepper to taste
  • Optional: sesame seeds and sliced chili for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear. Drain well.
  2. In a medium pot, bring chicken broth to a boil. Add the rinsed rice, reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and liquid is absorbed.
  3. While the rice cooks, heat vegetable oil in a large skillet over medium-high heat.
  4. Add minced garlic and grated ginger; sauté for 1 minute until fragrant.
  5. Add chicken pieces to the skillet, season with salt and pepper, and cook until browned and cooked through, about 7-8 minutes.
  6. Stir in soy sauce and chopped green onions, cooking for another 2 minutes to combine flavors.
  7. Fluff the cooked rice with a fork and gently mix it into the chicken and ginger mixture.
  8. Serve hot, garnished with sesame seeds and sliced chili if desired.

Notes

For extra flavor, marinate the chicken in soy sauce and ginger for 30 minutes before cooking. Serve with steamed vegetables or a fresh salad for a complete meal.
