Chocolate Covered Cherry Cupcakes

Decadent chocolate cupcakes filled with cherry preserves and topped with a rich chocolate ganache for a perfect blend of fruity and chocolaty flavors.

  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup cherry preserves
  • 4 ounces semi-sweet chocolate, chopped
  • 1/4 cup heavy cream
  • Fresh maraschino cherries for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  5. Alternate adding dry ingredients and buttermilk to the butter mixture, beginning and ending with dry ingredients; mix until just combined.
  6. Fill each cupcake liner halfway with batter.
  7. Add about 1 teaspoon of cherry preserves in the center of each cupcake, then cover with remaining batter to fill 3/4 full.
  8. Bake for 18-20 minutes or until a toothpick inserted near the edge comes out clean.
  9. Allow cupcakes to cool completely on a wire rack.
  10. To make ganache, heat heavy cream until just simmering and pour over chopped chocolate. Let sit 2 minutes, then stir until smooth.
  11. Spread ganache over cooled cupcakes and garnish with a maraschino cherry if desired.

Notes

For an extra cherry flavor, soak fresh cherries in Kirsch or cherry liqueur before garnishing. Store cupcakes in an airtight container in the refrigerator for up to 3 days.
