Chocolate Strawberry Heart Cupcakes

Delight in these moist chocolate cupcakes filled with a fresh strawberry heart, perfect for a romantic dessert or special occasion.

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water
  • 12 fresh whole strawberries
  • Chocolate frosting (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, and sugar.
  3. In another bowl, combine buttermilk, vegetable oil, egg, and vanilla extract.
  4. Slowly add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Carefully stir in boiling water until batter is smooth (batter will be thin).
  6. Fill each cupcake liner halfway with batter.
  7. Wash and hulled strawberries, then cut each strawberry in half lengthwise.
  8. Place one strawberry half upright in the center of each cupcake, cut side facing down, to create the heart shape.
  9. Fill the cupcake liner with remaining batter, covering the strawberry half completely.
  10. Bake for 18-22 minutes or until a toothpick inserted near the edge comes out clean.
  11. Let cupcakes cool completely on a wire rack.
  12. Frost with chocolate frosting and decorate as desired.

Notes

For extra flavor, chill the cupcakes before serving to allow the strawberry heart to set beautifully inside.
