Coconut Curry Baked Cod

Delicately baked cod infused with a rich coconut curry sauce, delivering a flavorful and healthy meal perfect for dinner.

  • 4 cod fillets (about 6 oz each)
  • 1 cup coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onion, garlic, and ginger until fragrant and translucent, about 3-4 minutes.
  3. Stir in red curry paste and cook for 1 minute.
  4. Add coconut milk and lime juice, stirring well to combine. Simmer for 5 minutes, then season with salt and pepper.
  5. Place cod fillets in a baking dish and pour the coconut curry sauce over them.
  6. Bake uncovered for 15-18 minutes or until the fish is cooked through and flakes easily with a fork.
  7. Garnish with fresh cilantro and serve warm with rice or steamed vegetables.

Notes

For an extra kick, sprinkle red chili flakes before baking or serve with a side of coconut rice to complement the curry flavors.
