colorful Chicken Fajita Rice

A vibrant and flavorful Chicken Fajita Rice combining tender chicken, colorful bell peppers, and seasoned rice for a quick and satisfying meal.

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon oregano
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • 1 lime, cut into wedges (optional)

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  2. Add sliced chicken, season with chili powder, smoked paprika, cumin, oregano, salt, and pepper. Cook until chicken is browned and cooked through, about 5–7 minutes. Remove from skillet and set aside.
  3. In the same skillet, add the remaining olive oil. Sauté the onions and garlic until softened, about 2 minutes.
  4. Add the sliced bell peppers and cook until tender-crisp, about 4–5 minutes.
  5. Add the uncooked rice to the skillet and stir to coat in oil and veggies.
  6. Pour in the chicken broth, bring to a boil, then reduce heat to low and cover. Simmer for 15 minutes or until rice is cooked and liquid is absorbed.
  7. Return the cooked chicken to the skillet and stir everything together gently. Heat through for another 2 minutes.
  8. Garnish with chopped cilantro and lime wedges before serving.

Notes

For extra flavor, add a sprinkle of shredded cheese or serve with sour cream on the side.
