Cottage Cheese Egg Bites are a protein-packed, fluffy snack perfect for breakfast or anytime energy boosts, combining creamy cottage cheese with eggs for a nutritious treat.

  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup chopped spinach (optional)
  • Salt and pepper to taste
  • Cooking spray or butter for greasing

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray or butter.
  2. In a mixing bowl, whisk the eggs until smooth.
  3. Add the cottage cheese, shredded cheddar, chopped spinach, salt, and pepper; mix until well combined.
  4. Pour the mixture evenly into the muffin cups, filling about 3/4 full.
  5. Bake in the preheated oven for 18-20 minutes or until the egg bites are set and lightly golden on top.
  6. Remove from oven and let cool slightly before removing from the tin.
  7. Serve warm and enjoy!
