  • 3 1/2 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1 tablespoon sugar
  • 2 teaspoons ground cinnamon
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 1/4 cups warm water (110°F/45°C)
  • 1 cup fresh cranberries, chopped
  • 1/2 cup raisins
  • 1/2 cup walnuts, chopped

Instructions

  1. In a large bowl, whisk together flour, salt, sugar, cinnamon, and yeast.
  2. Add warm water and stir until a shaggy dough forms.
  3. Fold in cranberries, raisins, and walnuts until evenly distributed.
  4. Cover bowl with a damp cloth and let dough rise at room temperature for 1 to 1 1/2 hours until doubled.
  5. Turn dough onto a floured surface and shape into a round loaf.
  6. Place loaf on a parchment-lined baking sheet, cover loosely, and let rise for another 45 minutes.
  7. Preheat oven to 450°F (230°C) with a Dutch oven or heavy covered pot inside.
  8. Carefully transfer dough into the hot pot, cover, and bake for 30 minutes.
  9. Remove lid and bake an additional 10-15 minutes until crust is golden brown.
  10. Let bread cool completely on a wire rack before slicing.

Notes

For an extra glossy crust, brush the loaf with a little melted butter immediately after baking. Serve with cream cheese or honey for a delicious treat.
