This creamy miso butter beans recipe combines tender butter beans with a savory miso sauce for a comforting and flavorful plant-based dish that’s perfect as a side or main.

  • 2 cups cooked butter beans (canned or home-cooked)
  • 2 tbsp unsalted butter
  • 1 tbsp white miso paste
  • 1/4 cup vegetable broth
  • 1 garlic clove, minced
  • 1 tsp soy sauce
  • 1 tsp fresh lemon juice
  • Freshly ground black pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. In a skillet over medium heat, melt the butter and sauté the minced garlic until fragrant, about 1 minute.
  2. Add the cooked butter beans to the skillet and stir to coat in the butter and garlic.
  3. In a small bowl, whisk together the miso paste, vegetable broth, soy sauce, and lemon juice until smooth.
  4. Pour the miso mixture over the beans and gently stir to combine.
  5. Cook for 3-5 minutes, stirring occasionally, until the sauce thickens and coats the beans.
  6. Season with freshly ground black pepper to taste.
  7. Remove from heat, garnish with chopped parsley, and serve warm.

Notes

For extra creaminess, stir in a splash of coconut milk or a dollop of vegan yogurt just before serving.
