Queso

Queso is a creamy and flavorful melted cheese dip, perfect for snacking or serving with tortilla chips and Mexican dishes. This warm, cheesy treat blends smooth cheeses with spices for an irresistible appetizer.

Ingredients

  • 8 oz Velveeta cheese, cubed
  • 1 cup shredded sharp cheddar cheese
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1/4 cup milk
  • 1/4 cup chopped onion
  • 1 jalapeño, seeded and finely chopped (optional)
  • 2 cloves garlic, minced
  • 1/2 tsp ground cumin
  • Salt, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a medium saucepan over medium heat, combine Velveeta cheese, shredded cheddar, and milk; stir frequently until cheese is melted and smooth.
  2. Add the drained diced tomatoes with green chilies, chopped onion, jalapeño, garlic, and cumin. Stir well to combine.
  3. Reduce heat to low and simmer for 5–7 minutes, stirring occasionally, until flavors meld and mixture is heated through.
  4. Taste and season with salt as desired.
  5. Transfer queso to a serving bowl, garnish with fresh cilantro, and serve warm with tortilla chips or as a topping for your favorite Mexican dishes.

Notes

For extra heat, add more jalapeños or a dash of hot sauce. Queso can be kept warm in a slow cooker for parties.
