  • 2 cups all-purpose flour
  • 1 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 3/4 cups milk
  • 2 large eggs
  • 1/2 cup melted butter
  • 4 boneless, skinless chicken thighs
  • 1 cup buttermilk
  • 1 cup all-purpose flour (for dredging)
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper
  • Salt and black pepper to taste
  • Vegetable oil for frying
  • Maple syrup, for serving
  • Optional: chopped green onions or hot sauce for garnish

Instructions

  1. Preheat your waffle iron according to manufacturer’s instructions.
  2. In a large bowl, whisk together 2 cups flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs, then add milk and melted butter; mix well.
  4. Combine wet ingredients with dry ingredients until just blended; do not overmix.
  5. Pour batter into the waffle iron and cook waffles until golden brown and crisp, then keep warm.
  6. Meanwhile, marinate chicken thighs in buttermilk for at least 30 minutes.
  7. In a shallow dish, mix the 1 cup flour with paprika, garlic powder, onion powder, cayenne, salt, and pepper.
  8. Heat vegetable oil in a deep skillet over medium-high heat to 350°F (175°C).
  9. Remove chicken from buttermilk, dredge thoroughly in seasoned flour mixture.
  10. Fry chicken pieces for 6-8 minutes per side until golden brown and cooked through; drain on paper towels.
  11. Serve the crispy chicken atop the warm waffles, drizzle with maple syrup, and garnish optionally with green onions or hot sauce.

Notes

For extra crispy chicken, double dredge by dipping the chicken back into buttermilk and flour mixture before frying.
