Crockpot Chicken Gravy

  • 4 bone-in, skinless chicken thighs
  • 1 cup chicken broth
  • 1 envelope chicken gravy mix
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 2 tablespoons all-purpose flour
  • 2 tablespoons cold water

Instructions

  1. Place chicken thighs, chopped onion, garlic, dried thyme, salt, and pepper into the crockpot.
  2. Pour chicken broth over the ingredients evenly.
  3. Cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
  4. Remove chicken and shred it with two forks; set aside.
  5. In a small bowl, whisk together chicken gravy mix, flour, and cold water until smooth.
  6. Stir gravy mixture into crockpot; cover and cook on high for 15-20 minutes until thickened.
  7. Return shredded chicken to the crockpot; stir to combine and heat through.
  8. Serve hot over mashed potatoes, rice, or biscuits.

Notes

For extra flavor, add a splash of heavy cream to the gravy before serving or garnish with fresh parsley.
