Taco Casserole

A flavorful and hearty taco casserole layered with seasoned ground beef, cheese, and beans, perfect for a comforting Mexican-inspired dinner.

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 2 cups shredded cheddar cheese
  • 6 small flour tortillas, cut into strips
  • 1/2 cup sour cream
  • 2 green onions, sliced
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef over medium heat until browned; drain excess fat.
  3. Add taco seasoning and salsa to the beef; simmer for 5 minutes.
  4. In a 9×9-inch baking dish, layer half of the tortilla strips, then half the beef mixture, half the beans, corn, and 1 cup of cheese.
  5. Repeat layers ending with cheese on top.
  6. Bake uncovered for 20 minutes until cheese is melted and bubbly.
  7. Remove from oven and let cool for 5 minutes.
  8. Top with sour cream, green onions, and cilantro before serving.

Notes

For extra spice, add a chopped jalapeño to the beef mixture or serve with hot sauce on the side.
