Flourless Yogurt Cake

A moist and tangy flourless yogurt cake that’s naturally gluten-free and perfect for a wholesome dessert or snack.

  • 1 cup Greek yogurt
  • 3 large eggs
  • 1 cup sugar
  • 1/2 cup almond meal
  • 1 teaspoon baking powder (gluten-free)
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • A pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
  2. In a mixing bowl, whisk the eggs and sugar until pale and fluffy.
  3. Stir in the Greek yogurt and vanilla extract until smooth and combined.
  4. Fold in the almond meal, baking powder, lemon zest, and salt gently to create a smooth batter.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan before removing and serving.

Notes

For extra flavor, serve with fresh berries or a drizzle of honey. You can also substitute almond meal with ground hazelnuts for a different nutty taste.
