Funeral Potatoes

Funeral Potatoes are a creamy, cheesy potato casserole topped with a crunchy cornflake crust, perfect as a comforting side dish for gatherings and family meals.

  • 6 cups frozen shredded hash browns, thawed
  • 2 cups sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 8 slices bacon, cooked and crumbled
  • 3 tablespoons melted butter
  • 2 cups crushed cornflakes
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine thawed hash browns, sour cream, cream of chicken soup, shredded cheddar cheese, chopped green onions, and crumbled bacon. Season with salt and pepper.
  3. Mix ingredients until well combined and transfer to a greased 9×13-inch baking dish.
  4. In a separate bowl, mix crushed cornflakes with melted butter.
  5. Sprinkle the cornflake mixture evenly over the potato mixture.
  6. Bake uncovered for 45-50 minutes until the top is golden brown and the casserole is bubbly.
  7. Let rest for 5 minutes before serving.

Notes

For a vegetarian version, substitute cream of chicken soup with cream of mushroom soup and omit the bacon.
