Ground Beef Enchiladas

These Ground Beef Enchiladas are a hearty and flavorful Mexican-inspired dish, featuring seasoned beef wrapped in tortillas and baked with a rich enchilada sauce and melted cheese.

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat vegetable oil over medium heat. Add diced onion and cook until softened, about 3 minutes.
  3. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Add ground beef to the skillet, breaking it apart with a spoon. Cook until browned and no longer pink.
  5. Stir in cumin, chili powder, paprika, salt, and pepper. Cook for 2 more minutes to blend flavors.
  6. Remove skillet from heat and stir in half a cup of enchilada sauce.
  7. Lightly grease a baking dish. Spread a thin layer of enchilada sauce on the bottom.
  8. Fill each tortilla with about 1/4 cup of the beef mixture and a sprinkle of shredded cheese. Roll up tightly and place seam-side down in the baking dish.
  9. Pour remaining enchilada sauce evenly over the rolled tortillas and top with the remaining shredded cheese.
  10. Bake uncovered for 20 minutes or until the cheese is bubbly and golden.
  11. Remove from oven and let cool for 5 minutes. Garnish with chopped cilantro if desired before serving.

Notes

For extra flavor, add chopped green chilies or serve with sour cream and guacamole on the side.
