Jalapeno Poppers Nourish Bowl

A flavorful and wholesome nourish bowl featuring spicy jalapeño poppers served atop a nutritious bed of fresh greens, grains, and creamy avocado for a perfect balance of heat and health.

  • 4 jalapeño peppers, halved and seeded
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked quinoa
  • 2 cups mixed salad greens
  • 1/2 avocado, sliced
  • 1/4 cup black beans, rinsed and drained
  • 1/4 cup corn kernels
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix softened cream cheese with shredded cheddar, smoked paprika, salt, and pepper.
  3. Stuff each jalapeño half with the cheese mixture and place on a baking sheet.
  4. Drizzle olive oil over the poppers and bake for 15 minutes until peppers are tender and cheese is golden.
  5. Meanwhile, assemble the nourish bowl by layering mixed greens, cooked quinoa, black beans, corn, and avocado slices in serving bowls.
  6. Top the bowls with the baked jalapeño poppers.
  7. Garnish with fresh cilantro and serve with lime wedges on the side for an extra burst of flavor.

Notes

For a milder version, remove all seeds from jalapeños and serve with a cooling yogurt drizzle.
