A comforting and flavorful Japanese-style onion soup featuring sweet caramelized onions simmered in a delicate kombu dashi broth, perfect as a light appetizer or side dish.

  • 3 large onions, thinly sliced
  • 4 cups kombu dashi broth
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon sugar
  • 1 tablespoon vegetable oil
  • 2 green onions, thinly sliced (for garnish)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add the sliced onions and cook slowly, stirring frequently, until they become soft and caramelized, about 20-25 minutes.
  3. Sprinkle sugar over the onions and continue to cook for another 3-5 minutes to deepen the sweetness.
  4. Pour in the kombu dashi broth, soy sauce, and mirin; stir to combine.
  5. Bring the soup to a gentle simmer and cook for 10 minutes to allow flavors to meld.
  6. Taste and adjust seasoning with salt and pepper as needed.
  7. Ladle the soup into bowls and garnish with sliced green onions before serving.

Notes

For added depth, top each serving with a small slice of toasted bread and a sprinkle of grated Parmesan cheese for a fusion twist.
