  • 2 boneless, skinless chicken breasts
  • 1 lemon (zested and juiced)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup shredded carrots
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh mixed greens (spinach, arugula)

Instructions

  1. In a bowl, combine lemon zest, lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper. Marinate chicken breasts for at least 30 minutes.
  2. Preheat grill or skillet over medium-high heat. Cook chicken for 6-7 minutes per side or until doneness and juices run clear.
  3. Let chicken rest for 5 minutes, then slice.
  4. Assemble bowls by dividing quinoa, mixed greens, cherry tomatoes, cucumber, shredded carrots, and parsley among serving bowls.
  5. Top with sliced chicken and sprinkle with feta cheese if desired.
  6. Drizzle with additional lemon juice or olive oil if preferred and serve immediately.

Notes

For extra flavor, marinate the chicken overnight. You can also swap quinoa for brown rice or couscous to vary the base.
