Loaded Beef Potato Casserole

This Loaded Beef Potato Casserole is a hearty and comforting dish combining seasoned ground beef, tender potatoes, cheese, and crispy bacon for a satisfying meal the whole family will love.

  • 1 lb ground beef
  • 4 large potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and cook the ground beef with minced garlic until browned. Drain excess fat.
  3. Add salt, pepper, and paprika to the beef and stir well. Remove from heat.
  4. Boil the diced potatoes in salted water until just tender, about 8-10 minutes. Drain well.
  5. In a mixing bowl, combine cooked potatoes, beef broth, and sour cream. Mix gently to coat.
  6. In a greased casserole dish, layer half of the potato mixture, then half of the cooked beef, followed by half of the shredded cheese and half the crumbled bacon.
  7. Repeat layers with remaining potato mixture, beef, cheese, and bacon.
  8. Bake uncovered for 25-30 minutes, or until the cheese is melted and bubbly.
  9. Garnish with chopped green onions before serving.

Notes

For extra creaminess, stir in a little cream cheese with the sour cream before layering. Serve with a fresh green salad for a balanced meal.
