Loaded Potato Meatloaf

This Loaded Potato Meatloaf is a hearty and comforting dish combining creamy mashed potatoes, savory ground beef, and classic toppings for an all-in-one family favorite.

  • 1 lb ground beef
  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup ketchup or BBQ sauce (for topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, mashed potatoes, breadcrumbs, milk, egg, garlic powder, onion powder, salt, and pepper until well mixed.
  3. Gently fold in half of the shredded cheddar cheese, bacon, and green onions.
  4. Shape the mixture into a loaf and place it in a greased baking pan.
  5. Spread ketchup or BBQ sauce evenly over the top of the meatloaf.
  6. Bake for 60 minutes, or until the meatloaf is cooked through and internal temperature reaches 160°F (71°C).
  7. Remove from oven, sprinkle with remaining cheddar cheese, and let rest for 10 minutes before slicing.

Notes

For extra flavor, serve with a side of steamed vegetables or a fresh green salad.
