  • 4 ears fresh corn, kernels removed
  • 1/2 pound smoked sausage, sliced
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 tablespoons butter
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large skillet over medium heat, melt butter and sauté onions, green and red bell peppers until softened, about 5 minutes.
  2. Add the garlic and smoked sausage slices; cook until sausage is browned and fragrant, about 4 minutes.
  3. Stir in the fresh corn kernels and Cajun seasoning; cook for another 5 minutes, stirring occasionally.
  4. Pour in the heavy cream and simmer the mixture until slightly thickened, about 3–4 minutes.
  5. Season with salt and black pepper to taste, then garnish with chopped parsley before serving.

Notes

For an extra kick, add a dash of hot sauce or substitute smoked sausage with Andouille sausage for authentic Cajun flavor.
