  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 400g cream cheese, softened
  • 250ml heavy cream
  • 100g powdered sugar
  • 1 tsp vanilla extract
  • 2 tsp lemon juice
  • Fresh berries for garnish (optional)

Instructions

  1. Crush the digestive biscuits into fine crumbs using a food processor or by placing them in a sealed bag and crushing with a rolling pin.
  2. Mix the biscuit crumbs with the melted butter until well combined.
  3. Press the mixture firmly into the base of a 9-inch springform pan to create an even crust. Refrigerate for 10 minutes to set.
  4. In a large bowl, beat the cream cheese until smooth and creamy.
  5. Add the powdered sugar, vanilla extract, and lemon juice, and mix until fully incorporated.
  6. In a separate bowl, whip the heavy cream until stiff peaks form.
  7. Gently fold the whipped cream into the cream cheese mixture until combined.
  8. Pour the filling over the chilled biscuit base and smooth the top with a spatula.
  9. Refrigerate the cheesecake for at least 4 hours or overnight until set.
  10. Before serving, garnish with fresh berries if desired. Remove the cheesecake from the pan and slice to serve.
