Omurice Japanese Rice Omelet

Omurice is a popular Japanese comfort food featuring fluffy omelet wrapped around flavorful ketchup fried rice, blending Western and Japanese culinary traditions into a delicious meal.

Ingredients

  • 2 cups cooked Japanese short-grain rice
  • 2 large eggs
  • 1/2 cup cooked chicken breast, diced
  • 1/4 cup onion, finely chopped
  • 1/4 cup mixed vegetables (peas, carrots, corn)
  • 2 tablespoons ketchup
  • 1 tablespoon soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Optional: parsley or green onions for garnish

Instructions

  1. Heat 1 tablespoon of vegetable oil in a frying pan over medium heat.
  2. Add onions and mixed vegetables, sauté until softened.
  3. Add diced chicken and cook until no longer pink.
  4. Stir in cooked rice, ketchup, and soy sauce. Mix well and cook for 2-3 minutes. Season with salt and pepper. Remove rice mixture from pan and set aside.
  5. Beat eggs in a bowl and season lightly with salt.
  6. Heat the remaining 1 tablespoon of oil in a non-stick pan over medium-low heat.
  7. Pour in beaten eggs and cook until the edges start to set but the center is still slightly runny.
  8. Place half of the fried rice onto the center of the omelet on the pan.
  9. Gently fold the omelet sides over the rice to enclose it, then carefully slide the omurice onto a plate, seam side down.
  10. Garnish with parsley or green onions and serve with extra ketchup if desired.

Notes

For a creamier texture, add a splash of milk to the eggs before beating. Serve with a side of fresh salad for a balanced meal.
