Red Velvet Valentine Cupcakes

  • 1 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp unsweetened cocoa powder
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk, room temperature
  • 1 large egg, room temperature
  • 1 tbsp red food coloring
  • 1 tsp white vinegar
  • 1 tsp vanilla extract
  • For the frosting:
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, sift together flour, baking soda, cocoa powder, and salt. Set aside.
  3. In a large bowl, whisk together sugar and vegetable oil until combined.
  4. Add egg, buttermilk, red food coloring, vinegar, and vanilla extract and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until smooth and fully incorporated.
  6. Divide batter evenly among cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow cupcakes to cool completely on a wire rack before frosting.
  9. For the frosting, beat cream cheese and butter together until creamy.
  10. Add powdered sugar one cup at a time, mixing well after each addition.
  11. Stir in vanilla extract and beat until smooth and fluffy.
  12. Pipe or spread the cream cheese frosting generously over cooled cupcakes.
  13. Optionally, decorate with red sprinkles or heart-shaped toppers for Valentine’s Day.

Notes

For an extra special touch, add a fresh raspberry or strawberry on top of each cupcake before serving.
