Crispy on the outside and tender on the inside, these Salmon Croquettes are a flavorful and easy-to-make seafood dish perfect for a quick dinner or appetizer.

Ingredients

Scale
  • 1 can (14.75 oz) pink salmon, drained and flaked
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 tablespoons mayonnaise
  • 1 large egg, beaten
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the flaked salmon, breadcrumbs, chopped onion, mayonnaise, beaten egg, lemon juice, salt, pepper, and parsley.
  2. Mix well until all ingredients are thoroughly combined.
  3. Shape the mixture into 8 evenly sized patties.
  4. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
  5. Fry the croquettes in batches, about 3-4 minutes per side, until they are golden brown and crispy.
  6. Drain on paper towels to remove excess oil.
  7. Serve warm with tartar sauce or lemon wedges, if desired.

Notes

For a lighter version, bake the croquettes at 400°F (200°C) for 20 minutes, flipping halfway through, instead of frying.
