shrimp casserole

This shrimp casserole is a comforting and flavorful dish featuring succulent shrimp baked in a creamy sauce with a crispy topping, perfect for an easy dinner.

  • 1 pound shrimp, peeled and deveined
  • 2 cups cooked rice
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 cup crushed potato chips or breadcrumbs for topping
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine cream of mushroom soup, mayonnaise, sour cream, lemon juice, garlic powder, and black pepper.
  3. Add shrimp, cooked rice, chopped onions, celery, and half of the shredded cheddar cheese to the mixture; stir until well blended.
  4. Transfer the mixture to a greased 9×13 inch baking dish.
  5. In a small bowl, mix crushed potato chips or breadcrumbs with melted butter.
  6. Sprinkle the topping mixture evenly over the casserole.
  7. Sprinkle remaining shredded cheddar cheese on top.
  8. Bake uncovered for 25-30 minutes, until the casserole is bubbly and golden brown on top.
  9. Remove from oven and let it cool for 5 minutes before serving.

Notes

For extra flavor, garnish with freshly chopped parsley or squeeze a bit of fresh lemon juice on top before serving.
