  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 cup cooked quinoa
  • 1 cup steamed broccoli florets
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh parsley
  • 1 tbsp lemon juice
  • Salt and freshly ground black pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add shrimp, season with salt, pepper, and red pepper flakes if using, and cook for 2-3 minutes per side until pink and opaque.
  4. Stir in remaining butter and lemon juice; cook for another minute until sauce is well combined.
  5. In serving bowls, layer quinoa, steamed broccoli, and cherry tomatoes.
  6. Top with garlic butter shrimp and drizzle any leftover sauce from the skillet over the bowl.
  7. Garnish with fresh parsley and serve immediately.

Notes

For extra flavor, add a sprinkle of freshly grated Parmesan cheese or a drizzle of extra virgin olive oil before serving.
