These Spicy Shrimp Sushi Stacks combine tender shrimp with zesty sauces and fresh sushi ingredients, creating a vibrant and flavorful appetizer or light meal perfect for sushi lovers.

  • 1 cup sushi rice, cooked and cooled
  • 8 oz cooked shrimp, chopped
  • 2 tbsp spicy mayo (mayonnaise mixed with sriracha)
  • 1 avocado, diced
  • 1 cucumber, peeled and diced
  • 2 sheets nori, cut into small squares
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • 1 tbsp sesame seeds, toasted
  • 2 green onions, thinly sliced
  • Pickled ginger for garnish

Instructions

  1. In a bowl, mix cooked sushi rice with rice vinegar and sesame oil; set aside.
  2. In another bowl, combine chopped shrimp with spicy mayo and soy sauce.
  3. Prepare a mold or ring and start layering: first place a nori square at the bottom.
  4. Add a layer of sushi rice over nori, gently pressing down.
  5. Add a layer of the spicy shrimp mixture on top of the rice.
  6. Top the shrimp with diced avocado and cucumber.
  7. Carefully remove the mold to reveal the stack.
  8. Garnish the top with toasted sesame seeds, sliced green onions, and a small piece of pickled ginger.
  9. Repeat to make additional stacks for serving.
  10. Serve immediately for best texture and flavor.

Notes

For an extra kick, drizzle additional sriracha on top or add thin slices of jalapeño. These stacks also pair wonderfully with a side of soy sauce and wasabi.
