Strawberry Cheesecake Quesadilla

A deliciously sweet and creamy twist on the classic quesadilla, featuring fresh strawberries and rich cheesecake filling perfectly grilled between warm tortillas.

  • 2 large flour tortillas
  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 tbsp butter
  • Honey or strawberry jam, for drizzling (optional)

Instructions

  1. In a bowl, mix softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Spread the cream cheese mixture evenly over one tortilla.
  3. Distribute the sliced strawberries evenly on top of the cream cheese layer.
  4. Place the second tortilla on top, pressing gently to secure.
  5. Heat butter in a skillet over medium heat.
  6. Cook the quesadilla for 2-3 minutes on each side or until golden brown and the filling is warm.
  7. Remove from skillet, slice into wedges, and drizzle with honey or strawberry jam if desired.
  8. Serve immediately and enjoy!

Notes

For an extra indulgent touch, serve with a scoop of vanilla ice cream or a sprinkle of crushed graham crackers.
