  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup roasted sweet potatoes, diced
  • 1/2 avocado, sliced
  • 1/4 cup shredded red cabbage
  • 1/4 cup cherry tomatoes, halved
  • 2 tbsp chopped fresh cilantro
  • 2 tbsp pumpkin seeds
  • 1 tbsp olive oil
  • 1 tbsp fresh lime juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine cooked quinoa, black beans, and roasted sweet potatoes.
  2. Drizzle olive oil and lime juice over the mixture, then season with salt and pepper. Toss gently to combine.
  3. Arrange the shredded red cabbage, cherry tomatoes, and avocado slices on top.
  4. Sprinkle with pumpkin seeds and chopped cilantro for added texture and flavor.
