Sweet Potato Brie Cranberry Pecans

A delightful blend of roasted sweet potatoes, creamy Brie, tart cranberries, and crunchy pecans, perfect as a comforting side or appetizer for any occasion.

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 4 oz Brie cheese, sliced
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, roughly chopped
  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tsp fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato cubes with olive oil, salt, pepper, and thyme.
  3. Spread sweet potatoes evenly on a baking sheet and roast for 25 minutes.
  4. Remove from oven and drizzle with maple syrup, then return to bake for another 5 minutes.
  5. Scatter dried cranberries and pecans over the sweet potatoes and top with Brie slices.
  6. Return to oven and bake for an additional 5-7 minutes until Brie melts.
  7. Remove from oven, let cool slightly, then serve warm.

Notes

For extra flavor, sprinkle a pinch of cinnamon over the sweet potatoes before roasting, or serve with a side of mixed greens for a complete meal.
