Sweet Potato Brussel Hash

A vibrant and hearty Sweet Potato Brussel Hash combining tender sweet potatoes and crisp Brussels sprouts for a flavorful and nutritious skillet meal perfect for any time of day.

  • 2 medium sweet potatoes, peeled and diced
  • 2 cups Brussels sprouts, trimmed and halved
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes and cook for about 8 minutes, stirring occasionally, until they start to soften.
  3. Add the diced red onion and cook for another 3 minutes until translucent.
  4. Stir in the Brussels sprouts and cook for 7-8 minutes until tender and slightly browned.
  5. Add the minced garlic, smoked paprika, cumin, salt, and pepper, stirring to combine.
  6. Cook for an additional 2 minutes until fragrant and well mixed.
  7. Remove from heat, garnish with fresh parsley, and serve warm.
