  • 1 cup red lentils, rinsed
  • 1 can (14 oz) coconut milk
  • 4 cups vegetable broth
  • 1 tbsp red curry paste
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 red bell pepper, diced
  • 1 tbsp lime juice
  • 2 tbsp fresh cilantro, chopped
  • Salt to taste
  • Fresh red chili slices for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger; sauté until fragrant and soft, about 3-4 minutes.
  2. Add red curry paste and cook for another minute, stirring constantly.
  3. Add red lentils, diced red bell pepper, vegetable broth, and coconut milk. Stir well.
  4. Bring the mixture to a boil, then reduce heat and simmer uncovered for 25-30 minutes, or until lentils are tender and soup has thickened.
  5. Stir in lime juice and season with salt to taste.
  6. Garnish with chopped cilantro and fresh red chili slices if desired. Serve hot.

Notes

For extra protein, serve with a side of grilled chicken or tofu. Adding a squeeze of fresh lime just before serving brightens the flavors.
