Tortellini Soup

Warm and comforting Tortellini Soup combines tender cheese tortellini with a flavorful broth and fresh vegetables for a hearty Italian-inspired meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 (14.5 oz) can diced tomatoes
  • 2 cups fresh spinach, chopped
  • 1 cup sliced mushrooms
  • 1 package (9 oz) cheese tortellini
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add broth and diced tomatoes with their juice; bring to a simmer.
  5. Add mushrooms, basil, oregano, salt, and pepper; simmer for 5 minutes.
  6. Add tortellini and cook according to package instructions, usually 3-5 minutes, until tender.
  7. Stir in chopped spinach and cook for another 1-2 minutes until wilted.
  8. Serve hot, garnished with grated Parmesan cheese.

Notes

For a richer flavor, use homemade broth and add a pinch of red pepper flakes for some heat.
