Yellow Squash Parmesan

Yellow Squash Parmesan is a delicious baked dish featuring tender yellow squash layered with rich Parmesan cheese and herbs, perfect as a comforting side or light main course.

  • 3 cups yellow squash, sliced
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian herbs
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Toss sliced yellow squash with olive oil, garlic, Italian herbs, salt, and pepper.
  3. In a baking dish, layer half of the squash slices, then sprinkle half of the Parmesan and mozzarella cheeses over.
  4. Repeat layering with remaining squash and cheeses.
  5. Top with breadcrumbs and a light drizzle of olive oil.
  6. Bake for 25-30 minutes until the squash is tender and the top is golden brown.
  7. Remove from oven, garnish with fresh parsley if desired, and serve warm.

Notes

For extra flavor, add a sprinkle of red pepper flakes or fresh basil before baking, or serve with a side of marinara sauce.
